His suggestions: Duo of kidneys and veal sweetbreads, fresh tagliatelle with truffle jus, a Port sauce - Grilled Lorraine ribeye (300g), béarnaise sauce, parsleyed baby potatoes - Creamy yellow wine risotto, grilled prawns seasonal vegetables, beurre blanc - Red tuna salad, heart of salmon marinated in beetroot, pickles and avocado toast

Vegetarian suggestion:   Creamy yellow wine risotto, sesame-crisped shiitake
